Cheese Meatloaf

4 eggs, beaten

1 lb.  shredded cheddar cheese

1-1/2 c. walnuts, finely chopped

1 c. brown rice, cooked

1/2 c. quick cooking rolled oats

1/2 c. fresh mushrooms, finely chopped

1 medium onion, finely chopped

1 clove garlic, finely chopped

1/4 tsp. salt

1/4 tsp. pepper

Combine all ingredients in a large bowl and mix well.  Pack firmly into a well greases 9x5x3 inch loaf pan.  Bake at 350 for 50 minutes or until firm.  Remove from oven and let stand 10 minutes.  Loosen around edges and turn onto warm serving dish.  Cut and serve with mushroom sauce.

Mushroom Sauce:

2-1/2 T. butter

1 c. fresh mushrooms, sliced

1-1/2 T. flour

1/4 tsp salt

1/8 tsp. pepper

1 c. milk

For mushroom sauce, melt butter, sauté mushrooms till light brown.  Remove mushrooms; add flour, salt and pepper and milk; cook until thick.  Note:  Yield 8 servings.
