Kohlrabi with Honey Butter

4 Small kohlrabies (about 1 lb), peeled and cut into 1/4 inch strips

1 Medium Carrot

1/4 tsp finely shredded lemon peel

1 tbsp. lemon juice

1 tbsp. snipped fresh parsley or chives

2 tsp honey

1 tbsp. butter

1.  Cool kohlrabies and carrot, covered in a small amount of boiling water for 6-8 minutes till crisp tender.  Drain, keep warm.

2.  Combine lemon peel and juice, chives or parsley, honey and 1/8 tsp pepper.  Pour over hot veggies, add butter, tossing to coat.  Makes 4 servings.
