Kale Apple Walnut Salad with Maple Vinaigrette

  • 1 head of kale washed well and dried
  • 1 Gala apple chopped into medium dices
  • 2 tablespoons of raisins
  • 2 tablespoons of craisins
  • 2-3 tablespoons of chopped walnuts
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tsp Dijon mustard
  • 1 tsp maple syrup
  • salt and pepper to taste


  1. Mix together the vinegar, oil, mustard, and syrup and season with salt and pepper to taste.
  2. Remove the tough stem from the kale and chopped into bite size pieces.
  3. Add the dressing to the kale and massage into the leaves. Yes, rub that dressing into those leaves. It will cause the kale to infuse with flavor and be easier to digest and softer to chew over time. Refrigerate for 2-8 hours and then before serving toss with the walnuts, apples, raisins, and craisins.
