Cheesy Zucchini Soup


  • 1 T olive oil
  • 2 cups chopped zucchini
  • 1/2 cup onion 
  • 1 cup chicken broth or 1 cup water and bouillon
  • 1/8 t salt
  • 1/8 t pepper
  • 1/8 t thyme
  • 1/4 cup sharp cheddar cheese divided in two


  1. Add oil and onion to a soup pan and sauté for 2 - 3 minutes.
  2. Add zucchini, spices and broth and bring to a boil.
  3. Cover and let simmer for 5 minutes or until zucchini is fork tender.
  4. Add to the blender or food processor along with half of the cheese.
  5. Blend on high until smooth and creamy.
  6. Use the rest of the cheese as garnish.
