Ratatouille Pasta or Rice w/ Sausage

serves 4


16 oz Macaroni Noodles (or your favorite noodle) or 2 c. Cooked Rice

1 lb Ground Italian Sausage

1 eggplant 

1-2 Sweet Peppers 

1 small yellow squash

1 small zucchini

2 small or 1 medium tomato or sungold cherry tomatoes cut in half

1/2 c. onion diced

1-2 Tbsp Italian Seasoning or fresh herbs (Basil, Parsley, Oregano) 

Olive oil


Cook Noodles or Rice according to directions on package.

Brown the Italian Sausage

Slice all of the vegetables into bite sized pieces. Saute veggies in olive oil until soft.

Mix Rice/Noodles, Meat Herbs and Veggies. Serve Hot.
