Cucumber Chickpea Salad

Ingredients

For the dressing:

  • ¼ cup Greek yogurt

  • ¼ cup olive oil

  • 2 tbsp lemon juice

  • 2 garlic cloves (or garlic scapes) , minced

  • 2 tsp fresh mint, chopped

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tsp oregano

For the salad:

  • 1 large cucumber, thinly sliced

  • 1 (14 oz) canchickpeas, drained and rinsed

  • ¼of a red onion, thinly sliced

  • ¼ cup parsley, chopped

  • ¼ cup fresh mint leaves, chopped (optional)

  • 2 tbsp fresh dill, chopped (or 1 tsp dried)

Instructions

  1. In a small bowl mix together the ingredients for the dressing, set aside.

  2. In a large serving bowl mix together the cucumber, chickpeas, red onion, parsley, mint and dill.

  3. Drizzle with desired amount of dressing and toss to combine. Serve cold.
